Healthier Lamingtons

No Australia Day would be complete without a lamington!!

Most lamington recipes can become messy when trying to cover fresh cake with the chocolate coating. The easiest way to do this is to allow the cake to cool and cut them to size and then freeze them!! Makes the whole processes so easy! Once you’ve coated them, just place them back into the freezer and they will defrost quickly and be really fresh when you are wanting to eat them!! Unlike most lamington recipes that are full of refined sugar, these are made with healthier wholefood ingredients. Here is a recipe that will cover off on all of your dietary needs and be safe for school lunch boxes too!!

INGREDIENTS:

Cake Ingredients:

  • 230g (2 cups) Gluten Free Flour
  • 135g (1 cup) Coconut Sugar
  • 40g Arrowroot Flour
  • 1 tsp Baking Powder (gluten free)
  • 3/4 tsp Bicarbonate Soda
  • 1/2 tsp Fine Salt
  • 80g Extra Virgin Olive Oil
  • 1 1/2 cups Coconut Milk
  • 1 Tblspn Apple Cider vinegar
  • 1 Tblspn Vanilla (powder or extract)
  • 1 1/2 cups Desiccated Coconut (for coating)

Chocolate Coating Ingredients:

  • 100g Coconut Oil
  • 2 Tblspns Raw Cacao Powder
  • 3 Tblspns Raw Honey
  • 1 Tsp Vanilla

METHOD:


Cake Method:

  1. Preheat oven to 180 degrees.
  2. Place all dry ingredients into a large mixing bowl and stir together.
  3. Place all wet ingredients into a jug and mix.
  4. Pour wet ingredients into dry and combine.
  5. Empty into a lined baking tray, approx 15cm x 30cm.
  6. Bake 35 mins, or until cooked through (check by using a tooth pick into the centre and if comes out clean it’s done)
  7. Remove from oven and allow to cool slightly before removing from tray and cooling completely on an airing rack.
  8. Cut into approximately 5 cm squares and place into the freezer to set.

Chocolate Coating Method:

  1. Put all chocolate coating ingredients into a small saucepan and stir until melted together – done!!

Bringing it all together:

  1. Place desiccated coconut into a small bowl.
  2. Once cake has frozen, remove from the freezer and place one square into the chocolate coating, making sure all sides are covered, gently shaking off the excess.
  3. Cover with desiccated coconut and place onto an airing tray to dry (will only need a few minutes)
  4. Repeat until all squares are covered.
  5. Place lemingtons back into a freezer safe container and place back into the freezer until needed.
