Grated Carrot & Mint Salad
Gluten, Grains, Dairy, Egg and Nut Free

Add this salad to your easy weekend night salad rotation, for a salad with a difference.
INGREDIENTS:
- 500g grated carrot*
- ¼ cup fresh mint – stems removed
- zest of ½ lime
DRESSING: - 1½ tablespoons honey
- 2 tablespoons fresh lime juice
- 1½ tablespoons fresh mint
- 2 tablespoons extra virgin olive oil
- salt and pepper to taste
METHOD:
- In a medium salad bowl, add carrot, mint and lime zest.
- Using a blender or hand blender, blend all dressing ingredients until smooth.
- Add dressing to salad bowl mix and serve.

NOTES:
* I use a julienne peeler to grate the carrots, if you don’t have one, a course grater instead.
