Grated Carrot & Mint Salad




Add this salad to your easy weekend night salad rotation, for a salad with a difference.





INGREDIENTS:

  • 500g grated carrot*
  • ¼ cup fresh mint – stems removed
  • zest of ½ lime

    DRESSING:
  • 1½ tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1½ tablespoons fresh mint
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste




METHOD:

  1. In a medium salad bowl, add carrot, mint and lime zest.
  2. Using a blender or hand blender, blend all dressing ingredients until smooth.
  3. Add dressing to salad bowl mix and serve.

NOTES:

* I use a julienne peeler to grate the carrots, if you don’t have one, a course grater instead.
