Easy Vegan Lemon Mousse

This vegan lemon mousse is so easy to make and is ready in just a few minutes.
The lemon in the mousse is a mouthful of freshness to eat on its own, but it’s great to eat with some berries, or chia pudding (recipe here), or to make an easy crumble to layer it with (see notes below).
INGREDIENTS:
- 290g silken tofu drained
- 60ml maple syrup
- 1 teaspoon vanilla
- 3 x medium lemons juiced
- zest 1 x lemon
- 2 tablespoons coconut oil
- 80g (β cup) coconut butter (store bought or make your own here)
- optional – additional lemon zest to add on top for decoration
METHOD:
- Place all ingredients into a blender, and blend until silky smooth.
- Place in an airtight container or jar and keep in the fridge until needed.
NOTES:
* To make an easy crumble, blend a handful of dates, sunflower seeds and coconut chips together for a few seconds until it’s the right consistency, and then layer the mixture into a glass.
