Easy Crispy Sausage Rolls
Gluten, Dairy, Egg, Soy and Nut Free
Makes 10

Pastry free, easy to make sausage rolls.
INGREDIENTS:
- 600g beef mince *see notes
- 1½ x carrots grated
- ½ leek diced***see notes
- ¼ cup coconut aminos (70g)**see notes
- 2 teaspoons sweet paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder/flakes (or 1 clove garlic diced)
- ½ teaspoon onion powder/flakes
- 2 teaspoons mixed herbs
- 20 x rice paper (spring roll wrappers)
- Sesame seeds/poppy seeds (opt)
METHOD:
- Preheat oven to 200℃ and prepare a lined large baking tray.
- Place all ingredients in a bowl and mix together.
- Fill large flat dish with warm water.
- Soak two rice papers in water for a few seconds to soften and place on bench, half overlapped (making a figure 8).
- With a handful of meat mixture, mold into a shape of a log and roll firmly.
- Lay in baking tray.
- Repeat until all mixture used.
- Sprinkle with sesame/poppy seeds if using.
- Bake for 40 minutes, until crunchy.

NOTES:
* Substitute or use a mixture of any kind of mince (pork, lamb or chicken).
** Coconut aminos can be replaced with 3-4 tablespoons tamari or gluten free soy sauce.
*** Replace leek with ½ diced onion.
*** Delicious straight from the oven served with a salad or cool for the lunchbox. They can be frozen and reheated if you find you have too many.
