Double Choc Banana Slice
Gluten, Dairy, Egg, Nut and Sugar Free β Vegan Friendly
Everyone loves some chocolate cake right? What about double chocolate with a little bit of banana as well?
Instead of making cakes, lately I’ve been making ‘slices’ instead. For the lunchbox and for small snacks, I find them to be a better size – without having to compromise on taste.
INGREDIENTS:
- 1 cup (135g) gluten free flour
- 1/3 cup (65g) coconut sugar
- 1/2 cup (40g) cacao powder
- 1 teaspoon bicarbonate soda
- pinch of salt
- 1/2 cup (70g) cacao nibs (plus an additional 1/4 cup (35g) optional)
- 1 chia egg (1 tablespoon chia seeds + 3 tablespoon water)
- 1 cup mashed ripe bananas (approx 3 large bananas)
- 1/2 cup (100g) extra virgin olive oil
- 1 teaspoon vanilla
METHOD:
- Preheat oven to 180 degrees.
- Make up chia egg and set aside for 5 minutes.
- In a large bowl add flour, cacao powder, bicarbonate soda, sugar, salt and cacao nibs together.
- Combined mashed banana, oil, vanilla and chia egg together.
- Add wet ingredients to dry ingredients and mix together.
- Pour into a prepared slice tray (mine is 30cmx18cm).
- Top with additional cacao nibs (opt).
- Cook for 30-35 minutes.
- Remove from oven and allow to cool before removing from tray and store in an air-tight container.
NOTES:
* This slice freezes great. I find it easiest to cut the slice before freezing, by putting it into the freezer before removing from the tray for 30 minutes as it hardens the slice making it easier to cut. Then, wrap them individually in baking paper and store in an air-tight container in the freezer.
