Date Rice Puff Slice

Gluten, Dairy, Egg and Nut Free

Date Rice Puffs

My kids are loving this recipe at the moment!!  This is a quick and easy recipe to make and have on hand for lunchboxes or an afternoon snack.  Best of all it is refined sugar free (if you ommit the sprinkles)!!

INGREDIENTS:

  • 50g Nuttelex (Dairy Free Spread)
  • 110g Pitted Dates
  • 10g Rapadura or Coconut Sugar
  • 60g Rice Puffs (see notes)
  • 1 tsp Natural Vanilla Extract or Vanilla Bean Paste
  • Desiccated Coconut or Natural Sprinkles (opt)

CONVENTIONAL METHOD:

  1. Roughly chop dates and place in a small saucepan with the Nuttelex and Rapadura
  2. Stir on a medium heat until dates have become a mushie and is a thick syrup consistency.
  3. Remove from heat and add rice puffs and vanilla.  Stir gently until combined.
  4. Empty into a lined slice tray or use a silicone slice tray if you have one, and flatten with a spatula or spoon
  5. If desired, top with desiccated coconut or natural sprinkles.
  6. Place into fridge to set for about 1 hour.
  7. Remove from slice tray and cut into pieces.  This slice will need to be kept in the fridge in an air tight container  until required.

THERMOMIX METHOD:

  1. Place dates, nuttelex and Rapadura into the thermomix bowl 8 sec/speed 7
  2. Heat for 3 mins/100/speed 3
  3. Add Rice and Vanilla and mix 30sec/reverse/speed 3
  4. Empty into a lined slice tray or use a silicone slice tray if you have one, and flatten with a spatula or spoon
  5. If desired, top with desiccated coconut or natural sprinkles.
  6. Place into fridge to set for about 1 hour.
  7. Remove from slice tray and cut into pieces.  This slice will need to be kept in the fridge in an air tight container  until required.

NOTES:  Make sure your Rice Puffs are gluten free.  You can get plain rice puffs with no added anything in the health food section of your supermarket or health food shop.
