Coconut Choc Peppermint Fudge




Eating fudge doesn’t necessarily mean you are eating a mouthful of refined sugar. This fudge is an easy to make and is loaded with good fats and a small amount of natural sugar giving you the sweet fix you’re after.




INGREDIENTS:


  • 260g coconut butter (* see notes)
  • 35g cacao powder
  • 70g coconut oil
  • 2 tablespoons raw honey ***
  • pinch of salt
  • 4-6 drops food grade peppermint oil (** see notes)


Coconut Choc Peppermint Fudge




METHOD:


  1. Mix all ingredients in a small bowl
  2. Pour mixture into a silicone or lined baking tray (approx. 22cmx15cm)
  3. Place in freezer to set up to 1 hour
  4. Remove and cut in desired size
  5. Store in the fridge or freezer


NOTES:
* You can buy coconut butter already made, or if you have a high-speed blender you can easily make you own by following this recipe.
** This is yummy as a coconut chocolate fudge – just omit the peppermint oil or add in orange food-grade essential oil if you like a choc-orange taste.
*** to make this vegan friendly, simply swap the raw honey with maple syrup or your liquid sweetener of choice.
