Coconut Choc-Peppermint Fudge
Gluten, Grain, Dairy, Egg, Nut and Refined Sugar Free
Vegetarian (with vegan opt), Paleo and Gaps Friendly
Eating fudge doesn’t necessarily mean you are eating a mouthful of refined sugar. This fudge is an easy to make and is loaded with good fats and a small amount of natural sugar giving you the sweet fix you’re after.
INGREDIENTS:
- 260g coconut butter (* see notes)
- 35g cacao powder
- 70g coconut oil
- 2 tablespoons raw honey ***
- pinch of salt
- 4-6 drops food grade peppermint oil (** see notes)
METHOD:
- Mix all ingredients in a small bowl
- Pour mixture into a silicone or lined baking tray (approx. 22cmx15cm)
- Place in freezer to set up to 1 hour
- Remove and cut in desired size
- Store in the fridge or freezer
NOTES:
* You can buy coconut butter already made, or if you have a high-speed blender you can easily make you own by following this recipe.
** This is yummy as a coconut chocolate fudge – just omit the peppermint oil or add in orange food-grade essential oil if you like a choc-orange taste.
*** to make this vegan friendly, simply swap the raw honey with maple syrup or your liquid sweetener of choice.
