Coconut Butter
Gluten, Grain, Dairy, Egg, Nut and Refined Sugar Free
Makes 330g
It is way to easy (and cheaper) to make your own coconut butter!! If you have some coconut chips or desiccated coconut and a blender that is all you need!!
INGREDIENTS
- 300g Coconut chips
- 30g Extra Virgin Coconut Oil (opt)
METHOD
Place coconut chips into your blender (I used my thermomix, but any high speed blender would work)
Blend for 2 minutes and scrap down the inside of the jug or blender (I used speed 8 for 2 mins)
Add coconut oil if using and repeat blending for another 2 minutes, scrapping down sides until required consistency has been reached (see pictures)
And your done.. Pour into a clean jar and store in the pantry.
It really is as simple as that.
Notes:
The butter will easily store for a few months in the pantry – no need to refrigerate.
Different brands of coconut chips will take different amount of time.
Experiment by adding cacao or your favour sugar while blending.
