Coconut and Cashew Butter
Gluten, Grain, Dairy, Egg and Refined Sugar Free
Makes 300g
INGREDIENTS:
- 120g Coconut Chips
- 150g Roasted Cashews
- 30g Extra Virgin Coconut Oil
THERMOMIX METHOD
- Place all ingredients into the thermomix bowl blend with MC on for 1 min/speed 7
- Scrap down sides and blend 2 mins/speed 7 – repeating for 3 times for a total of 7 minutes. Consistency should be smooth after this time, if you feel it could do with more – repeat again for another 2 minutes.
- Pour into a clean jar and store in the pantry. (See Notes)
NOTES:
During the colder weather, the butter may harden due to the coconut. If you require it to be melted place jar in warm water until it melts.
Butter will store in your pantry for a few months.
