Christmas Ham and Mango Salad
Who doesn’t love Christmas food? There is something special about eating food that we have available at this time of year. I always over cater and we end up with way to much left over. Sometimes I think I do it on purpose so that we can extend the Christmas feeling just that little bit longer.
This salad is an easy one to put together that takes no time at all.
- 200g freshly sliced leg ham (it’s worth the effort to source nitrate free ham from your butcher)
- 3 mangoes sliced
- a punnet of cherry tomatoes halved
- 1 cucumber sliced
- 3 large handfuls of baby spinach
Dressing:
- 3 T of Apple Cider Vinegar
- 3 T of Extra Virgin Olive Oil
- Salt and Pepper
- 1/2 t of raw honey
It is as easy as
- Place all dressing ingredients together and mix well
- Place all salad ingredients into individual bowls and drizzle dressing over the top.
I have used left of turkey and it also tastes great. Outside Christmas time, left over roast chicken would also work.
