Chocolate Mud Cake with Chocolate Ganache
Gluten Free, Dairy Free, Egg Free and Nut Free
I love chocolate mud cake and since going gluten and dairy free, I’ve struggled to find a ‘real’ chocolate mud cake. Being “a bit” of a healthy eating nut, this recipe is outside of what I would normally eat, but I figure if I’m going to have the occasional piece of chocolate mud cake – I’m ok for this to be the exception!
Cake
- 1 1/2 cups (210g) Gluten Free Flour
- 1 t Arrowroot/Tapioca Flour
- 75g Cocoa
- 1/2 t Himalyan Salt
- 1/2 t Bicarbonate Soda
- 1 cup (200g) Coconut Sugar
- 120g Vegan Cream Cheese
- 1/2 cup melted Coconut Oil
- 2 T Chia Seeds mixed with 6 T Water
Ganache
- 1/4 Cup (57ml) Coconut Milk
- 75g Dairy-Free Chocolate
- Mix chia seeds and water together into a jug and let sit
- Preheat oven to 190 degrees
- Place all dry ingredients into a bowl and mix well together
- Add wet ingredients into a small bowl and mix well.
- Add wet ingredients to dry ingredients and mix well.
- Place cake mixture into greased 20cm pan
- Bake for 25 mins until a toothpick is able to come out of the cake clean
- Leave to cool for 10 mins before removing from cake pan
- Place coconut milk and chocolate into a small saucepan and stir on low heat until chocolate has melted.
- Set aside and allow to cool for 10 minutes before pouring over cooled cake
- Cut and enjoy.
I’ve not really cooked with condensed milk Ema, but I don’t see why it wouldn’t work!! Let me know how you go!
Can I top it with condensed milk?
