Chocolate Coconut Slice with Healthy Icing

Gluten, Grain, Dairy, Egg & Refined Sugar Free – GAPS/Paleo/Vegan

Who doesn’t love a creamy chocolate slice!! This is one that can be eaten without any guilt!! The slice is a great option if you are dealing with a number of food restrictions. It’s healthy icing is made with avocado – that’s right AVOCADO!! – giving it a heavenly creaming texture and makes it paleo and gaps friendly as well!! (if you opt to use the raw honey). This slice is also vegan!! I’ve served this up to people and they have no idea that the icing is made from something so healthy!!

INGREDIENTS:

SLICE INGREDIENTS:

  • 125g Extra Virgin Coconut Oil (liquify)
  • 80g (2/3 cup) Coconut Sugar*
  • 80g (3/4 cup) Coconut Flour
  • 2 Tblspn Cacao Powder
  • 25g (1/2 cup) Coconut Chips
  • 1 Tblspn Chia Seeds + 3 Tblespn Water**
  • 1 Tspn Vanilla

CHOCOLATE ICING:

  • 2 x Medium Ripe Avocados
  • 35g (3 Heaped Tblspn) Cacao Powder
  • 70g (1/4 cup) Maple Syrup or Raw Honey***
  • 1 tsp Vanilla (opt)
  • Pinch Salt

METHOD:

SLICE METHOD:

  1. Pre-heat oven to 160 degrees fan-forced (180 degrees conventional)
  2. Mix chia seeds into water and allow to sit to become a gel.
  3. Place all dry ingredients into a bowl.
  4. Add all wet ingredients into dry ingredient bowl and mix together.
  5. Turn mixture into lined slice tray (approx 30cmx15cm)
  6. Press flat into tray with fingers and cook for 25 mins
  7. Remove from oven and allow to cool

ICING METHOD:

  1. Remove flesh from avocado and place into blender
  2. Add remaining icing ingredients and blend until really smooth (Thermomix Spd 4/30secs)
  3. Test a small amount and adjust with more sweetener if necessary.
  4. Spread on top of cooled slice base with spatula.

NOTES:

This slice will need to be stored in the fridge, because of the avocado icing, but will be ok in there for about a week – if it lasts that long!! * You can use any sugar of your choice – I prefer coconut sugar for its benefits. ** You can use an egg as a substitute for the chia mixture if you’d prefer, although doing this will not make this a vegan recipe *** Liquid sweetener of your choice can be used here. My preference is to use either raw honey or 100% pure maple syrup. You may need to add more maple at this stage to adjust for your own taste.
