Chocolate Chunk Biscuit






INGREDIENTS:

  • 2 cups (270g) gluten free flour
  • 1 cup (135g) coconut sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup extra virgin coconut oil (melted)
  • ½ cup coconut milk
  • 1 teaspoon vanilla
  • 1 x block dairy and additive free chocolate




METHOD:

  1. Preheat oven 180°C.
  2. Prepare baking trays.
  3. Place all dry ingredients into a bowl and mix together.
  4. Place all wet ingredients into a small bowl and mix together.
  5. Add wet ingredients into dry bowl and combine.
  6. Roll together heaped spoonful amounts of mixture and place onto prepared baking tray, flatten with fingers until about ½cm thick.
  7. Break chocolate bar into pieces and place on top of biscuits.
  8. Bake in oven for approximately 17 minutes or until golden brown.
  9. Allow to cool before removing from baking tray
