Choc-Orange Fudge

Gluten, Dairy, Egg, Nut and Refined Sugar Free

Choc-Orange Fudge

INGREDIENTS:

  • 1 cup (100g) Coconut Chips
  • 150g Pitted Dates (about 26 dates)
  • 1/2 cup (70g) Pumpkin Seeds (see notes)
  • 1 Tbl Chia Seeds
  • 2 Tbl Cacao or Cocoa
  • 3 drops of Orange Essential Oil (food grade oil or Orange Extract) See notes

METHOD:

  1. Place everything (except orange essential) into a blender or thermomix and blend until ‘fudgy’ consistency (thermomix sp 10/1 min 30secs)
  2. Add orange oil into mixture and blend for another 10-20 seconds
  3. Place spoonfuls of mixture into silicone ice trays and press until firm
  4. Place into the freezer for about 1-2 hours and remove from silicone trays
  5. Store in the fridge in an air tight container – my kids take these to school and are a great lunchbox addition

NOTES:  I used doTERRA Essential Oil – Wild Orange.  A big thank you to Stacey Jones – Living Well with Essential Oils for giving me some of her beautiful oils to try!!!!!

I am sure that using orange extract would work in this recipe as well though, but you will need to try the mixture to see how you go with the flavour.

We are a nut free house, but the pumpkin seeds could be replaced for a nut if you prefer.

If you are a little short on time, place mixture into a lined tray approximately 15cmx20cm and place into fridge for about 1 hour and turnout onto a board cutting into desired sizes.
