Chicken Stir-Fry (Gluten and Egg Free)

A stir-fry is always a quick an easy week day meal that’s loaded with nutrients, this is one that our family loves.

  • 2  x free range chicken breast (sliced)
  • 2 tbs extra virgin olive oil
  • 1/4 organic tamari (gluten free soy sauce)
  • 2 tbs raw honey
  • 2 x cloves garlic (crushed)
  • 1 x head of broccoli (cut into bite sized pieces)
  • 1 x Orange carrot (cut into slices)
  • 1 x purple carrot (cut into slices)
  1. Place oil into a wok on medium-high heat.  Once heated add chicken and cook through.
  2. Add tamari, honey and garlic and mix.
  3. Place all other ingredients into wok and mix together until vegetables are heated (do not overcook vegetables, stir fry is best when they are still crispy).

We normally eat on bed of rice noodles or with steamed rice.  Easily adaptable with any or no meat and vegetables that your family loves.
