Chicken Layered Salad 2

 

This is one of my favourite easy go to meals that can be made in advance.  So simple, fast and healthy.

  • 3 leaves of cos lettuce (shredded)
  • 1 cob of corn (or 1 can of corn)
  • 250g of cherry tomatoes (cut in half)
  • shredded chicken (cook your own or buy a roast chicken)
  • 1 cucumber (sliced thinly)
  • 1 carrot (grated)
  • a handful of snow peas
  • 2 handfuls of baby spinach leaves
  • home made tomato sauce
  • guacamole

Chicken Layered Salad

Place all ingredients, except tomato sauce and guacamole, into a bowl.  I put my homemade tomato sauce and guacamole on top and it is done.  It is that simple!!  It is such a versatile recipe – add your families own favourite vegies or meat (or leave the meat out all together), add, grated cheese or sour cream (we are dairy free here).
