Gluten, Dairy, Nut, Egg and Refined Sugar Free




Blueberry Compote




Compote, similar to jam, but made with less sugar and whole fruits.

Delicious eaten with yoghurt, ice-cream, chia pudding and pancakes.







INGREDIENTS:

  • 2 cups blueberries (fresh or frozen)*
  • 2 tablespoons lemon juice**
  • ΒΌ cup (80g) maple syrup***
  • 1 teaspoon vanilla






METHOD:

  1. In a small saucepan, place 1 cup of blueberries, along with all other ingredients.
  2. Simmer on medium heat for 10 minutes.
  3. Add remaining blueberries and simmer for another 8 minutes.
  4. Remove from heat and place in a glass jar or container. The blueberry mixture will thicken once cooled.
  5. Serve with ice-cream, yoghurt, chia pudding or pancakes.







NOTES:

* You can use any berry or mixture of berries in this recipe.
**Lime juice can be used as a replacement.
*** Honey can be substituted in same quantity.
