Avocado Salad
Gluten, Grains, Dairy, Egg and Nut Free

This avocado salads is definitely one of my favourites. Perfect with the hot weather as a topper for grilled chicken, fish or fritters.
INGREDIENTS:
- 2 x large ripe avocados (diced)
- ½ cup fresh mint (torn)
- 1 x small lime (juiced)
- salt and pepper to taste
METHOD:
- Place all ingredients into a salad bowl and mix gently.
- Store in fridge covered until needed.
NOTES:
* Some optional add-ins could be – diced cucumber, diced onion or baby spinach leaves
** Great eaten with grilled chicken, steak or fish, fritters, hash browns or in poke bowls.
