Asian Chicken Salad Sandwich
I don’t always have time to make a sit down meal, but I always make sure our family has healthy nourishing food. The Asian chicken salad sandwich is something that I can prepare earlier in the day and know that we will still be eating well. It’s also great to take on a picnic or pack into the lunch bag.
- 2-3 chicken breast pre-cooked and shredded (if you are really short on time use a bough roast chicken)
- 1 carrot cut into small, thin strips
- 1 1/2 large handful of chopped snow peas
- 2 large celery sticks thinly sliced
Salad Dressing
- 3 T extra virgin olive oil
- 3 T tamari (or soy sauce)
- 1 T white wine vinegar
- 1 t raw honey
- 2 cloves of garlic (crushed)
- Put all salad dressing ingredients into a jar and shake well
- Place all other ingredients into a salad bowl and combine (at this stage place in the fridge if you are going to use later in the day)
- Add salad dressing and combine
- Place salad onto your favourite type of fresh bread or large lettuce leaf as a bread alternative
We are gluten and yeast free, and we use a bread that I make (but I’ll save that for another post!)
