Asian Chicken Salad Sandwich

I don’t always have time to make a sit down meal, but I always make sure our family has healthy nourishing food.  The Asian chicken salad sandwich is something that I can prepare earlier in the day and know that we will still be eating well.  It’s also great to take on a picnic or pack into the lunch bag.

  • 2-3 chicken breast pre-cooked and shredded (if you are really short on time use a bough roast chicken)
  • 1 carrot cut into small, thin strips
  • 1 1/2 large handful of chopped snow peas
  • 2 large celery sticks thinly sliced

Salad Dressing

  • 3 T extra virgin olive oil
  • 3 T tamari (or soy sauce)
  • 1 T white wine vinegar
  • 1 t raw honey
  • 2 cloves of garlic (crushed)
  1. Put all salad dressing ingredients into a jar and shake well
  2. Place all other ingredients into a salad bowl and combine (at this stage place in the fridge if you are going to use later in the day)
  3. Add salad dressing and combine
  4. Place salad onto your favourite type of fresh bread or large lettuce leaf as a bread alternative

We are gluten and yeast free, and we use a bread that I make (but I’ll save that for another post!)
